Prepare for the tasting

Ideal serving temperature: 16°–18°C – refrigerate for 15 min or freeze for 2 min

Perfect pairings: lamb chops, Provençal beef stew, sausage and mash

The tasting

Appearance: deep purple colour with violet highlights

Aroma: a nose revealing notes of dark fruit, jam, ‘pigeon heart’ cherry flesh, kirsch, liquorice and spice

Palate: a full, generous palate with firm, dense and velvety tannins

Ageing potential: up to 15 years. In its youth, this wine offers all the freshness and exuberance of fruit and powerful tannins. With age, it will mellow, developing softer tannins and aromas of leather, undergrowth and liquorice. If you have the patience, this wine can easily be kept for 10 to 15 years
