The winemaker and his story

Located between the Pyrenees and the Mediterranean Sea, in Rivesaltes, in the heart of Roussillon, Maison CAZES was created in 1895 by Michel Cazes.

The 220 hectare estate is ideally located on a terroir at the foot of the Corbières foothills, in the Agly valley.

The soils, predominantly clay-limestone , are strewn with shale debris and siliceous pebbles , an association remarkably conducive to the production of great wines.

Domaine Cazes is celebrating its 25th anniversary of conversion to biodynamics .

Ideal Temperature: 10 - 12°C - i.e. 25 min in the refrigerator or 8 min in the freezer

Perfect Pairings: powerful cheeses (Munster, Maroilles), chocolate mousse, tiramisu

The tasting

The view: Seven years in wood have given the brilliant and luminous color mahogany tones. A mix of orange, red and copper tones.

Smell: An intense nose, mixed with spices, coffee, cocoa, and the sweetness of candied fruits. Complex scents of nuts, caramel and roasting emerge from the glass.

Taste: On the palate, the world of roasting is revealed, ranging from ganache to coffee liqueur with notes of prune. Roundness, ripe fruit, hint of dried fruit, empyreumatic notes of tobacco and roasting. Beautiful length in the mouth which fades with freshness.
